Laurel Ives is a widely published food and health writer. As the former food editor of the Sunday Times, and health writer for leading publications like the BBC and the Daily Telegraph, she is a foodie on a mission to champion sustainable, plant-based, flexitarian eating. 

Vegetarian food used to be a bit of an afterthought for leading chefs. But nowadays pioneering chefs like Yotam Ottolenghi, and many more, are creating such delicious plant-based options that no compromise in quality is required.
